Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Spread the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for about 10 minutes until bright green and tender but still crisp.
  • In a bowl, combine halved cherry or grape tomatoes with a bit of olive oil, salt, and pepper. Toss gently and set aside.
  • Once the asparagus has cooled slightly, arrange it on a serving plate and scatter the seasoned tomatoes on top.
  • Tear the burrata cheese into chunks and scatter over the salad.
  • Sprinkle the toasted pine nuts and fresh basil leaves over the salad.
  • Drizzle balsamic vinegar and remaining olive oil over the salad before serving.
