Instructions

Preparation

  • In a dry skillet over medium heat, toast the pine nuts until golden brown and fragrant. Set aside.
  • In a small bowl, whisk together honey, lime juice, olive oil, salt, and pepper until well combined. If using herbs, add them to the dressing.
  • In a large bowl or serving platter, layer the arugula with diced mango, sliced avocado, and sliced red onion.
  • Drizzle the prepared dressing over the salad and gently toss to coat the ingredients without smashing the avocado.
  • Top the salad with toasted pine nuts and additional black pepper for flavor. Serve immediately.
