  • 1 tablespoon butter For grilling the bread.

Instructions

Preparation

  • Butter one side of each slice of bread.
  • On the non-buttered sides, layer the slices of mozzarella.
  • Add sliced avocado and tomato on top of the mozzarella. Sprinkle with salt and pepper.
  • Drizzle with balsamic glaze or spread pesto on the veggies if desired.

Cooking

  • Heat a skillet over medium heat and place the sandwich butter-side down.
  • Grill for 2-3 minutes until golden brown and cheese begins to melt.
  • Carefully flip the sandwich and grill for another 2-3 minutes until golden and melty.
  • Slice the sandwich in half and serve hot.

Notes

For a crunchier texture, add baby spinach or arugula. Experiment with different cheeses and consider adding sliced jalapeño for some heat. Can be served with tomato soup or salad.
