Ingredients

For the Base

  • 1 loaf 1 round rustic bread loaf (bread boule) Choose a sturdy loaf that has a nice crust and good flavor.
  • 2 tablespoons 2 tablespoons extra virgin olive oil To brush on the bread for flavor and crispness.
  • Kosher salt, to taste Enhances the flavors of all ingredients.
  • Freshly ground black pepper, to taste Complements the dish beautifully.

For the Filling

  • 1 wheel 1 wheel of brie (about 12 oz, triple cream recommended) Opt for a creamy, rich brie for the best melting experience.
  • 1/2 cup 1/2 cup whole berry cranberry sauce The tartness of cranberry sauce adds a delightful contrast to the creamy cheese.
  • 2 tablespoons 2 tablespoons fresh thyme leaves Fresh thyme imparts an earthy flavor that enhances the overall profile of the dish.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Slice off the top quarter of the bread loaf and hollow out the inside to create a snug space for the brie.
  • Make 1.5-inch cuts around the outer edge of the bread, slicing three-quarters of the way down without cutting through the bottom.
  • Brush the inside of the bread with olive oil and sprinkle with kosher salt, black pepper, and half of the fresh thyme leaves.

Baking

  • Place the brie wheel inside the hollowed-out bread, top with remaining thyme, and spoon cranberry sauce over the brie.
  • Replace the top of the bread and place the loaf on a foil- or parchment-lined baking sheet.
  • Bake for 20 minutes, or until the brie is melted and the bread is warm and slightly crisp.

Serving

  • Remove from the oven and serve immediately with toasted scooped-out bread pieces for dipping.

Notes

Add a dash of honey over the brie before baking for added sweetness. For added crunch, mix in some walnuts or pecans.
