Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • Brown the ground beef in a skillet over medium heat.
  • Add the chopped onion and minced garlic to the skillet, cooking until onion is translucent.
  • Stir in the taco seasoning and 1⁄4 cup water and let simmer until thickened.

Assembly

  • Spread a thin layer of salsa on the bottom of a 9×13-inch casserole dish.
  • Layer two tortillas over the salsa.
  • Spread half the refried beans and half of the beef mixture over the tortillas.
  • Sprinkle half of the cheddar and Monterey Jack cheese.
  • Repeat the layering process with remaining ingredients, finishing with tortillas topped with salsa and cheese.

Cooking

  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
  • Garnish with sour cream and cilantro before serving.

Notes

This dish is make-ahead friendly. Store leftovers in the fridge for up to 3-4 days or freeze for 2-3 months. Feel free to swap ingredients for healthier options.
