Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, combine ground chicken, ricotta, Parmesan, spinach, breadcrumbs, egg, minced garlic, salt, black pepper, oregano, and onion powder. Mix until just combined.
  • Scoop the mixture into 1.5-inch balls and arrange them on the prepared baking sheet.

Baking

  • Bake for 20–22 minutes, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  • While the meatballs are baking, warm your marinara sauce in a skillet.
  • Once the meatballs are ready, toss them in the marinara sauce until well-coated.
  • Sprinkle with extra Parmesan before serving.

Notes

Don’t overmix the meat mixture to avoid dense meatballs. Chill the mixture for 30 minutes for easier shaping. You can add fresh herbs and spices like red pepper flakes for more flavor.
