Ingredients

For the Marinade

For the Steak

Instructions

Make the Marinade

  • Combine ½ cup of olive oil, ½ cup of balsamic vinegar, ½ tsp of salt, ½ tsp of cracked black pepper, and 2 tbsp of brown sugar in a mixing bowl.
  • Add the chopped green onions and whisk everything together until well-blended.

Marinate the Steak

  • Lightly score one side of your flank steak in 1-inch sections.
  • Place the steak in the marinade for 30–45 minutes, turning occasionally.

Broil the Steak

  • Preheat your oven broiler on high.
  • Place the marinated steak on a broiler pan and broil for 3 minutes on each side.

Add the Crust

  • Mix ½ tbsp of melted butter with 2 tbsp of panko bread crumbs.
  • Press the crumbled blue cheese into the scored cuts of the steak.
  • Sprinkle the breadcrumb mixture over the top and broil for an additional 5 minutes.

Rest and Serve

  • Let the steak rest for 10–15 minutes before slicing.
  • Slice thinly against the grain and serve on a platter.
