Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, whisk together rolled oats, almond flour, baking powder, cinnamon, salt, and chia seeds (if using).
  • In a separate bowl, mash ripe bananas until smooth. Stir in maple syrup, melted coconut oil, and vanilla extract.
  • Pour the banana mixture into the dry ingredients and fold gently until just combined. Fold in the blueberries.

Baking

  • Scoop about 2 tablespoons of dough for each cookie onto the prepared baking sheet and flatten them slightly.
  • Bake for 12-15 minutes until edges are golden brown.
  • Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use overripe bananas for more sweetness. Handle the dough gently to avoid tough cookies. Cool before serving for best texture.
