Ingredients

For the Chicken Skewers

  • 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes You can use either breast or thighs.
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pack Wooden skewers (soaked in water for 30 minutes) Soak to prevent burning.

For the Bang Bang Sauce

  • 0.5 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha Adjust to taste.
  • 1 tablespoon honey
  • 1 teaspoon lime juice

Instructions

Marinate the Chicken

  • In a large bowl, combine olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and black pepper. Whisk until well mixed.
  • Add the chicken pieces and toss to ensure they are evenly coated in the marinade. Cover the bowl and let the chicken marinate in the fridge for at least 30 minutes (or up to 4 hours for maximum flavor).

Make the Bang Bang Sauce

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until the mixture is smooth and creamy.
  • Taste and adjust the Sriracha to your desired level of heat. Set the sauce aside for serving.

Assemble the Skewers

  • Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.

Cook the Skewers

  • Grilling: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  • Oven: Preheat your oven to 400°F (200°C). Arrange the skewers on a baking sheet and bake for 20-25 minutes, flipping halfway through cooking time.
  • Air Fryer: Set your air fryer to 375°F (190°C). Cook the skewers for 10-12 minutes, flipping halfway through.

Serve & Enjoy

  • Once cooked, drizzle the Bang Bang sauce over the skewers or serve it as a dipping sauce on the side. Garnish with chopped green onions and a sprinkle of sesame seeds if desired.

Notes

For additional flavor, soak the skewers in a mixture of water and a splash of apple cider vinegar. Feel free to increase the Sriracha for more heat. Add bell peppers or zucchini for a healthy touch. Use pre-marinated chicken for convenience.
