Instructions

Preparation

  • Begin by parboiling the potato slices in salted water for about 4 minutes. Drain and set aside to cool slightly.
  • In a hot wok, heat 1 tablespoon of oil over high heat. Add the beef slices and sear until browned on the outside, about 3-5 minutes. Remove the beef from the pan and set aside.
  • In the same pan, add the remaining oil, onion, garlic, and ginger. Sauté until fragrant, about 2 minutes. Add the blanched potatoes and cook until golden and crispy, stirring occasionally.
  • Return the seared beef to the pan. Pour in the soy sauce, oyster sauce, hoisin sauce, and brown sugar. Stir well to coat.
  • Add the cornstarch slurry and stir until combined and the sauce reaches a desirable consistency.
  • Stir in the chopped scallions and sesame oil. Serve hot over rice or noodles.

Notes

Consider marinating the beef slices in soy sauce, garlic, and sesame oil for extra flavor. For variations, substitute beef with tofu or seitan for a vegetarian version.
