Instructions

Preparation

  • In a large mixing bowl, beat the softened butter and cream cheese together until light and fluffy, about 2-3 minutes.
  • Add granulated sugar and beat until well incorporated, then mix in the egg yolk and vanilla extract until creamy.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, beating on low speed just until a soft dough forms.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for 30-45 minutes.

Baking

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Scoop about 1 tablespoon of dough, roll it into a ball, and place them 2 inches apart on the baking sheets. Flatten slightly.
  • Bake for 10-12 minutes or until the edges are golden brown. Allow to cool completely before dusting with sugar.

Notes

Make sure your butter and cream cheese are at room temperature for best results. Optionally, add chocolate chips, nuts, or dried fruit for variation. Store cookies in an airtight container for up to one week, or freeze for three months.
