Instructions

Preparation

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine Oreo crumbs and melted butter, then press into the bottom of the pan and bake for 10 minutes.
  • Let the crust cool completely after baking.
  • In a large bowl, beat the softened cream cheese until smooth.
  • Gradually mix in the granulated sugar, then sour cream and vanilla extract until velvety.
  • Add eggs one at a time, mixing well after each addition, then fold in melted dark chocolate and crushed Oreos.

Baking

  • Pour cheesecake batter into the cooled crust and bake for 60-70 minutes or until set and edges are lightly browned.
  • Turn off the oven and let cheesecake cool inside with the door slightly ajar for 1 hour.

Chilling and Ganache

  • Refrigerate cheesecake for at least 4 hours, preferably overnight.
  • For the ganache, heat dark chocolate chips and heavy cream in a microwave-safe bowl; stir until smooth.
  • Drizzle ganache over the edges of the cheesecake.

Decoration
