  • 1 pint blackberries Fresh, plump, and bursting with flavor.
  • 1 tablespoon balsamic vinegar Adds a sweet acidity.
  • 1 tablespoon heavy cream For a creamy texture.
  • 4 ounces goat cheese Rich and tangy.
  • 1 sprig fresh rosemary For aromatic notes.
  • 1 zest lemon For brightness.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the French baguette into 1/2-inch rounds and arrange them on a baking sheet.
  • Drizzle the baguette slices with olive oil and sprinkle with a pinch of salt.
  • Bake for 5 minutes until they start to toast.

Toasting the Baguette

  • Flip the baguette slices over and bake again for another 5-7 minutes until golden and crisp.

Cooking Blackberries

  • In a small pan, simmer half of the blackberries with balsamic vinegar and the fresh rosemary over medium heat for about 5 minutes.
  • Gently mash the blackberries with a fork to release their juices.

Combining Ingredients

  • Remove the pan from heat and discard the rosemary.
  • Mix the mashed blackberries with the remaining whole blackberries in a bowl.
  • In a separate bowl, combine goat cheese, heavy cream, lemon zest, salt, and pepper until smooth.

Assembly

  • Spread a generous amount of the goat cheese mixture on each toasted baguette slice.
  • Top with a spoonful of the blackberry mixture and garnish with a small piece of fresh rosemary.

Notes

For extra flavor, drizzle honey on top and consider adding crushed red pepper flakes for heat. Store components separately in airtight containers and re-toast the baguette before serving.
