Ingredients

For the crust

Instructions

Make the Crust

  • In a mixing bowl, combine graham cracker crumbs with melted butter and a pinch of salt. Mix until all crumbs are well-coated.
  • Press about 2 tablespoons of the mixture firmly into the bottom of each jar.
  • Chill the jars in the refrigerator while preparing the cheesecake filling.

Lime Cheesecake Layer

  • In a separate bowl, beat together softened cream cheese, powdered sugar, lime juice, and vanilla extract until silky smooth.
  • Gently fold in whipped topping to introduce lightness to the cheesecake mixture.
  • Spoon the cheesecake mixture over the set crust layer in the jars.

Blackberry Mousse Layer

  • Blend fresh blackberries with sugar and lime juice until a smooth purée is achieved.
  • Optional: strain the mixture to remove seeds.
  • Fold the blackberry purée into another 1/2 cup of whipped topping until light and fluffy.
  • Spoon the blackberry mousse layer over the cheesecake layer in the jars.

Assemble and Chill

  • Top each jar with fresh blackberries and a sprinkle of graham cracker crumbs.
  • Refrigerate the jars for at least 1 hour before serving.

Notes

Add mint leaves on top before serving for extra flavor. You can swap blackberries with raspberries or strawberries for variations. Use room temperature cream cheese for a smoother texture.
