Instructions

Prepare the Blueberry Sauce

  • In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, and brown sugar. Stir occasionally while gently mashing the berries to release their juices. Let the mixture simmer for about 5 minutes, or until it thickens slightly, creating a syrupy consistency.
  • Once thickened, remove from heat and strain the mixture through a fine mesh strainer, discarding any solids. Set this luscious balsamic blueberry sauce aside for your sandwich.

Make the Sandwich

  • Take one slice of rustic bread and generously spread the blueberry mixture on top. Layer half of the cheese atop the blueberry spread, followed by a handful of spinach or arugula, and finally add the remaining cheese.
  • Finish it off with a sprinkle of freshly ground black pepper. Place the second slice of bread on top to complete your sandwich masterpiece.

Grill the Sandwich
