Instructions

Prepare the Crust

  • Mix the graham cracker crumbs, melted butter, and sugar together in a medium bowl until combined. Press into the bottom of a greased 9-inch springform pan and chill.

Make the Blueberry Layer

  • Combine fresh blueberries, 2 tablespoons sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat, stirring gently, for 5-7 minutes until thickened.

Whip the Cream Cheese Filling

  • Beat the softened cream cheese with powdered sugar, lemon zest, egg, and vanilla extract until smooth and creamy.

Assemble the Layers

  • Spoon half of the blueberry mixture over the chilled crust, then pour the cream cheese filling on top, spreading gently. Optionally swirl in remaining blueberry mixture.

Make the Crumble Topping

  • Combine flour, brown sugar, cinnamon, and cold butter in a bowl. Mix until it resembles coarse crumbs, then sprinkle over the assembled layers.

Bake to Perfection

  • Preheat oven to 325°F (160°C) and bake for 45-50 minutes until the center is set and the top is golden brown. Allow to cool completely, then refrigerate for at least 4 hours before slicing.
