Ingredients

For the crust

  • 1.5 cups graham cracker crumbs Crunchy and aromatic

Instructions

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until crumbly, then press firmly into the bottom of a springform pan.
  • Bake the crust for 10 minutes, then let it cool.
  • In a small saucepan, combine blueberries, 1/4 cup sugar, and cornstarch slurry. Cook over medium heat until thickened, then let it cool.
  • In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.

Layering and Baking

  • Pour half of the cream cheese mixture over the cooled crust, dollop half of the blueberry sauce on top, and swirl gently with a knife. Repeat with remaining mixture.
  • Bake for 55–60 minutes, until edges are set but the center jiggles.
  • Turn off the oven and let the cheesecake cool with the door ajar for about an hour.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.

Serving

  • Garnish each slice with whipped cream and fresh blueberries before serving.

Notes

Ensure ingredients are at room temperature. Gradually cool the cheesecake to prevent cracks. Chill overnight for the best flavor.
