Ingredients

For the Sweet Potato Filling

Instructions

Preparation of Sweet Potatoes

  • Simmer the Sweet Potatoes: Place the diced sweet potatoes in a pot with water. Bring to a simmer and cook until soft, about 15-20 minutes. Drain and return to the pot, then add butter, cinnamon, salt, and pepper. Mash and set aside to cool.

Prepare the Pastry

  • On a floured surface, roll out the chilled puff pastry into a rectangle of even thickness. Score two lines down the center to create a filling panel and make angled strips on both sides for braiding.

Fill and Braid

  • Spoon the sweet potato mash into the center panel. Top with crumbled feta and chopped pistachios.
  • Braid the pastry by folding the strips over the filling, alternating sides.

Finish and Bake

  • Brush the top with egg wash and sprinkle with crushed pistachios.
  • Preheat your oven to 400°F (200°C) and bake for 25-30 minutes until golden.

Serve

  • Let the pastry rest for 10 minutes before slicing and serving warm, optionally drizzling with maple syrup or honey.
