Instructions

Preparation

  • Generously season the beef short ribs with salt and pepper on all sides.
  • Heat ghee or butter in a heavy pot over medium-high heat. Add the short ribs and sear for 12 to 15 minutes until beautifully browned. Remove ribs and set aside.
  • In the same pot, add sliced onion and minced garlic. Sauté for 2-3 minutes until onion is translucent.
  • Pour in balsamic vinegar and coconut aminos, scraping up any browned bits. Stir in tomato paste and flour until smooth.
  • Gradually whisk in the beef broth, ensuring a lump-free sauce.

Cooking

  • Return seared ribs to the pot, add thyme and bay leaf. Cover and transfer to a preheated oven at 350°F (175°C). Bake for about 2 hours.

Serving

  • Remove thyme and bay leaf before serving. Plate the ribs and drizzle with sauce.

Notes

Allow ribs to rest after baking for enhanced tenderness. For deeper flavor, add Worcestershire sauce or smoked paprika.
