Instructions

Preparation

  • Season the beef short ribs generously with salt and pepper.
  • Heat the ghee or butter in a heavy pot over medium-high heat.
  • Sear the ribs on all sides until browned, about 12-15 minutes, then set aside.

Cooking

  • In the same pot, sauté the sliced onion and minced garlic for 2-3 minutes until soft.
  • Deglaze the pot with coconut aminos and balsamic vinegar, scraping the bottom.
  • Stir in the tomato paste and flour, then whisk in beef broth until smooth.
  • Return the ribs to the pot with thyme and bay leaf, cover, and braise in a preheated oven at 350°F (175°C) for about 2 hours.
  • After 2 hours, remove the pot from the oven and discard thyme and bay leaf.
  • Serve the ribs with the sauce drizzled over them.

Notes

Take your time searing the ribs for the best flavor. Feel free to use different herbs or vegetables as variations.
