Instructions

Preparation

  • In a bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Stir gently to ensure the tomatoes are nicely coated. Cover and chill in the refrigerator for at least 10 minutes to allow the flavors to mingle.

Cooking the Pasta

  • Bring a large pot of salted water to a boil, then add the spaghetti. Cook according to package instructions, generally about 8-10 minutes. Once cooked, drain and set aside.

Sauté the Chicken

  • In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the diced chicken, seasoning with Italian seasoning and a pinch of salt and pepper. Cook until the chicken is no longer pink and cooked through, around 6-8 minutes. Remove it from the skillet and set aside.

Combine Ingredients

  • In the same skillet, add the remaining tablespoon of olive oil. Stir in the chilled tomato mixture and cook for 1 minute, just to warm the tomatoes slightly.

Toss Everything Together

  • Add the cooked spaghetti and chicken to the skillet, tossing until well combined. The residual heat will ensure everything is warmed through.

Serve

  • Dish out the pasta into bowls or on plates. Generously top with grated or shredded Parmesan cheese. Drizzle with balsamic glaze, if using, and serve warm.
