Ingredients

For the Filling

  • 3 cups slow-cooked pulled buffalo chicken Juicy and flavorful, adds the perfect kick.
  • 4 oz cream cheese Rich and creamy, forms the silky base.
  • 1/4 cup blue cheese dressing Tangy addition that complements the dish.
  • 2 tbsp crumbled blue cheese For added punch of flavor.
  • 1/4 cup shredded Monterey Jack cheese Melty and mild, rounds out the mix.
  • 1/4 cup shredded Fontina cheese Creamy and nutty flavor.
  • 1/4 cup shredded Gouda Smoky and smooth cheese.
  • 1 tbsp Frank’s RedHot Original Hot Sauce For iconic Buffalo flavor.

For Assembly

  • 2 cans Pillsbury Grands! Buttermilk Biscuits 8 biscuits per can.
  • 2 tbsp melted butter To brush on top for a golden finish.
  • 1 tsp kosher salt Enhances all of the delicious flavors.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 13x9-inch baking dish.
  • In a medium saucepan, merge cream cheese, blue cheese dressing, crumbled blue cheese, shredded Monterey Jack, Fontina, and Gouda. Stir over medium heat until melted.
  • Fold in pulled buffalo chicken until well combined.
  • Chill the mixture for about 20 minutes to make it easier to work with.
  • Divide the filling into 16 equal portions.

Assembly

  • Flatten each biscuit into a 5-inch round.
  • Place one portion of the filling at the center of the biscuit, fold and pinch edges to seal.
  • Arrange bombs seam-side down in the greased baking dish—6 in the center and 5 on each side.

Baking

  • Bake for 30-35 minutes until golden brown.
  • Brush with melted butter and sprinkle with kosher salt before serving.

Serving

  • Serve warm alongside blue cheese dressing and extra Frank’s RedHot for spice.

Notes

Make-ahead: Prepare the filling a day in advance. Cheese variations: Swap cheeses for favorites or add Pepper Jack for more kick. Adjust filling to preferred cheesiness. Healthier options available by using reduced-fat products.
