  • 1.5 cups shredded mozzarella cheese Velvety and gooey

  • 1 tbsp olive oil For greasing the baking dish
  • 25–30 slices mini pepperoni (or regular, cut in half) Savory bites

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil.
  • Boil your tortellini in salted water for 2 minutes less than the package recommends.
  • Drain the tortellini and set it aside.
  • In a large bowl, combine the cooked tortellini, pizza sauce, Italian seasoning, garlic powder, and half the mozzarella cheese. Toss gently to combine.
  • Pour the mixture into your greased dish, spreading it evenly.
  • Top with the remaining mozzarella, Parmesan, and pepperoni slices.

Cooking

  • Bake uncovered for 20–25 minutes or until the cheese is melted, bubbly, and slightly golden.
  • Sprinkle with red pepper flakes and parsley, if desired.
  • Serve hot.

Notes

To elevate the casserole, add extra veggies like bell peppers or mushrooms. You can use different types of cheese for varying flavors. For richness, add a splash of cream.
