Instructions

Preparation

  • Prepare the zucchini by laying zucchini slices on a tray, sprinkling them with salt. Allow them to sit for 15–20 minutes to draw out excess moisture. Once done, pat them dry with paper towels.

Cooking

  • In a skillet, heat olive oil over medium heat. Sauté the finely chopped onion until soft, then add the minced garlic. Cook for an additional minute.
  • Add heavy cream, Dijon mustard, nutmeg, salt, and pepper into the skillet. Simmer for 2–3 minutes before removing from heat.
  • Preheat the oven to 200°C (400°F). Grease a baking dish, layer zucchini slices, spoon cream sauce over them, and scatter cheese on top. Repeat for 2–3 layers.
  • Finish with remaining cheese and a sprinkle of Parmesan. Bake uncovered for 25–30 minutes until gratin turns golden and bubbles.
  • Let cool slightly, then top with chopped herbs. Serve warm and enjoy.
