Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking tray with foil or prepare an oven-safe skillet.
  • Bring a large pot of water to a boil. Add the corn and cook for 5–6 minutes until just tender. Drain and set aside.
  • In a mixing bowl, combine melted butter, minced garlic, parsley, salt, and smoked paprika. Stir well.
  • Arrange the corn cobs on the baking tray and brush each with the garlic butter mixture.
  • Sprinkle shredded cheese over each buttered corn cob.

Cooking

  • Bake for 10 minutes. Switch to broil for an additional 2-3 minutes until cheese bubbles and turns golden brown.
  • Remove from the oven, sprinkle with extra parsley, and serve hot with lime wedges.

Notes

For best flavor, use fresh corn. Optional variations include adding breadcrumbs for crunch or different herbs for flavor.
