Ingredients

Zucchini Preparation

Assembly

  • 1.5 cups marinara sauce For the base and topping.

Instructions

Preparation

  • Slice the zucchinis lengthwise into thin strips, about 1/8th of an inch thick. Lay them on paper towels and sprinkle with salt. Let sit for 15–20 minutes to release moisture, then pat dry.

Make the Ricotta Filling

  • In a medium bowl, combine ricotta, minced garlic, salt, black pepper, oregano, grated parmesan, and optional egg. Mix well until creamy. Optionally fold in cooked meat.

Assemble the Roll-Ups

  • Spread the ricotta filling onto each zucchini slice and roll gently. Place each roll seam-side down in a greased baking dish with a layer of marinara at the bottom.

Top with Sauce and Cheese

  • Spoon marinara sauce over the zucchini rolls and sprinkle generously with shredded mozzarella.

Bake to Perfection

  • Cover with foil and bake at 375°F for 20 minutes, then uncover and bake for an additional 10–15 minutes until cheese is golden.

Garnish and Serve

  • Let cool slightly, garnish with fresh basil or parsley, and serve hot.
