  • 1 large avocado, diced Creamy and buttery, adding a delightful texture and healthy fats.
  • 1/3 cup ranch dressing Zesty and flavorful, this will tie all the ingredients together.
  • 1/2 cup diced tomatoes Juicy and slightly acidic, bringing freshness to each bite.
  • 1/4 cup red onion, chopped Aromatic and slightly sweet, adding depth to the filling.
  • 2 tbsp fresh cilantro, chopped Bright and herbaceous, elevating the overall taste.
  • 1 tbsp lime juice Tangy and refreshing, balancing the rich flavors of chicken and avocado.
  • 1/2 tsp salt Enhancing all the flavors, making them sing.
  • 1/4 tsp black pepper Adding a touch of warmth without overwhelming the dish.

For the Assembly

  • 4 large flour tortillas Soft and pliable, holding all the delicious fillings together.
  • 1 cup shredded lettuce Crisp and refreshing, offering a nice crunch.
  • 1 cup shredded cheddar cheese Creamy and melty, enriching the flavor profile.
  • 1/4 cup sour cream (optional) Rich and tangy, perfect for drizzling.
  • 1/4 cup salsa (optional) Spicy and vibrant, a great condiment to enhance every bite.

Instructions

Preparation

  • In a mixing bowl, combine the cooked shredded chicken, diced avocado, ranch dressing, diced tomatoes, chopped red onion, chopped cilantro, lime juice, salt, and black pepper. Use a fork or spatula to gently mix everything together until well combined, ensuring the avocado remains somewhat chunky to provide texture.

Tortilla Preparation

  • Heat a non-stick pan over medium heat or microwave the tortillas for about 20-30 seconds until soft and pliable. This will make it easier for you to fold and roll them without tearing.

Assembly

  • Lay a tortilla flat on a clean surface. Spoon a generous amount of the chicken-avocado filling onto the center of the tortilla. Top with shredded lettuce and a sprinkle of cheddar cheese for added flavor.
  • Fold in the sides of the tortilla over the filling, then roll it tightly starting from the bottom to form a burrito. Make sure it’s snug but not overly tight to avoid any spills.
  • Once filled and rolled, slice the burrito in half diagonally for service. If desired, serve with a dollop of sour cream and a side of salsa for extra flavor.

Notes

Choose ripe avocados for the best creaminess. Feel free to customize with additional ingredients like diced bell peppers or corn. You can prepare the filling a day in advance and store it in the refrigerator.
