Coating Ingredients

  • 1/2 tsp paprika For color and mild smokiness.
  • 2 tbsp butter, melted Binds the breadcrumb mixture.

Binding Ingredients

  • 2 large eggs Acts as a binder.
  • 2 tbsp milk Ensures creamy egg wash.

Instructions

Prepare the Filling

  • In a large mixing bowl, combine the softened cream cheese, shredded mozzarella, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.
  • Slice a pocket into each chicken thigh, being careful not to cut all the way through.
  • Stuff each thigh with the cream cheese mixture and use toothpicks to secure if needed.

Coat the Chicken

  • In a bowl, whisk together the eggs and milk for the egg wash.
  • In another bowl, mix panko breadcrumbs, grated Parmesan, Italian seasoning, paprika, and melted butter.
  • Dip each stuffed chicken thigh into the egg wash, letting excess drip off, then coat with the breadcrumb mixture.

Bake to Perfection

  • Preheat the oven to 375°F (190°C).
  • Place coated chicken thighs in a greased baking dish, spaced for even cooking.
  • Bake for 25-30 minutes or until golden brown and fully cooked.

  • Let the chicken rest for a few minutes, garnish with parsley, and serve hot.

Notes

For an extra creamy filling, add more Parmesan to the cream cheese. Use gluten-free breadcrumbs if necessary.
