Instructions

Preparation

  • Preheat your oven to 400°F (200°C) for roasting the tomatoes.
  • In a bowl, toss halved cherry tomatoes with olive oil, minced garlic, salt, and pepper. Spread them on a lined baking sheet and roast for about 20 minutes until caramelized.
  • Slice chicken breasts horizontally into thinner pieces for faster cooking. Season with salt, smoked paprika, and Italian seasoning.

Cooking

  • Heat olive oil in a large skillet over medium heat. Cook seasoned chicken for about 5 minutes on each side until fully cooked and golden brown. Remove and slice thinly.
  • In the same skillet, add lemon slices, minced garlic, and butter. Cook gently for a couple of minutes until fragrant, then remove from heat.
  • Boil spaghetti according to package directions until al dente. Drain and add to the skillet with lemon garlic butter. Toss well and remove the lemon slices.

Assembly

  • Top the pasta with sliced chicken and roasted tomatoes. Tear portions of Burrata over the pasta, sprinkle with fresh basil and toasted pine nuts. Serve immediately.

For best results, use high-quality olive oil and butter. Consider adding red pepper flakes for heat or experimenting with different herbs.
