Ingredients

For the cake

  • 3/4 cup all-purpose flour Provides structure and lightness.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 10x15-inch jelly roll pan and line it with parchment paper.
  • In a medium bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the eggs on high speed for about 5 minutes until thick and lemon-colored. Gradually add the granulated sugar and vanilla extract, beating well after each addition.
  • Gently fold the dry mixture into the egg mixture, being careful not to deflate the eggs.
  • Spread the batter evenly into the prepared jelly roll pan and bake for about 12-15 minutes.
  • While the cake bakes, dust a clean kitchen towel generously with powdered sugar.
  • Once baked, invert the cake onto the towel and peel away the parchment paper.
  • Roll up the cake and the towel together tightly from one of the short sides and allow to cool completely.

Filling and Assembly

  • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cake is cool, unroll it and spread the whipped cream evenly over the surface.
  • Roll up the cake again without the towel and wrap it in plastic wrap. Refrigerate for at least 1 hour.
  • Before serving, dust the top of the cake with powdered sugar, slice, and enjoy.

Notes

For added texture, consider incorporating chocolate chips or nuts into the filling. For a richer flavor, add a splash of brewed coffee to the whipped cream. Keep your whipped cream chilled before beating.
