Instructions

Preparation

  • Preheat your oven to a gentle 250°F (120°C).
  • Slice the tomatoes about ½ inch thick and lay them flat on a parchment-lined tray.
  • Drizzle tomatoes generously with olive oil and sprinkle sea salt, sugar, and thyme or rosemary.

Roasting

  • Slide the tray into the oven and let tomatoes roast for 2 to 2.5 hours until slightly golden.

Avocado Swirl

  • In a food processor, blend avocado, lime juice, lime zest, Greek yogurt, and salt until silky.

Plating

  • Once tomatoes are confited, swoosh the avocado mixture across the plate.
  • Layer the confited tomato slices atop the avocado swirl.
