Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes Firm, smooth-skinned for best texture.
  • 2 tablespoons olive oil For rubbing on potatoes.

  • 1 cup black beans Creamy and rich source of protein.
  • 1 cup corn kernels Can be grilled, canned, or frozen.
  • 1/2 medium red bell pepper, diced Brings a sweet flavor.
  • 1/2 medium yellow bell pepper, diced Adds visual appeal.
  • 1/2 small red onion, finely chopped Adds sharp bite.
  • 1 medium jalapeño, minced (optional) For those who crave heat.
  • 1 medium tomato, diced and seeded Juicy and fresh.
  • 1 juice of lime Brightens the dish.
  • 2 tablespoons olive oil For cowboy caviar mix.
  • 2 tablespoons fresh cilantro, chopped Adds herby freshness.
  • to taste salt & pepper Ensure to season caviar.

For Serving

  • to taste Greek yogurt or sour cream For creamy topping.

Instructions

Preparation of Sweet Potatoes

  • Preheat the oven to 200°C (400°F). Scrub the sweet potatoes under running water and prick them with a fork to allow steam to escape. Rub each potato with olive oil and season with salt and pepper. Roast for 45-60 minutes until fork-tender.

Making Cowboy Caviar

  • In a mixing bowl, combine black beans, corn, diced red and yellow bell peppers, finely chopped red onion, minced jalapeño (if using), diced tomato, lime juice, olive oil, chopped cilantro, and a pinch of salt and pepper. Toss gently and chill in the refrigerator.

Assembling the Dish

  • Once sweet potatoes are roasted, cool them slightly, slice them open lengthwise, and fluff the flesh with a fork. Sprinkle with salt.
  • Spoon the chilled cowboy caviar generously over each sweet potato.
  • Add a dollop of Greek yogurt or sour cream, and garnish with cilantro or avocado slices.

Notes

Select firm sweet potatoes for best texture. Ensure your oven is preheated. Let the cowboy caviar chill to enhance flavors.
