Instructions

Make the Gnocchi Dough

  • Mix the mashed roasted sweet potato with the egg yolk, salt, and a sprinkle of nutmeg. Gradually add 120–150 g of all-purpose flour until a soft, smooth dough forms.

Shape & Cook the Gnocchi

  • Divide the dough, roll into ropes, and cut into 2 cm pieces. Boil the gnocchi in salted water until floating, about 2–3 minutes.

Prepare the Fondue Sauce

  • Melt butter in a saucepan and stir in flour to create a roux. Gradually whisk in whole milk and simmer until thickened. Add Gruyère cheese, Parmesan, and Dijon mustard, stirring until melted.

Assemble the Bake

  • Combine cooked gnocchi with the fondue sauce in a buttered baking dish. Sprinkle top with Parmesan and paprika or black pepper.

Bake to Golden Bliss

  • Preheat the oven to 200°C (390°F) and bake for 15–20 minutes until golden. Cool for 5 minutes before serving, optionally garnishing with chives or parsley.

Perfecting Gnocchi: Use the right amount of flour. Roasting sweet potatoes enhances sweetness. Prepare gnocchi in advance and freeze. Experiment with different cheeses for the sauce. Infuse milk with herbs for added flavor.
