Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Clean the mushrooms and remove the stems.
  • Lightly brush the mushroom caps with olive oil and season with salt and pepper.
  • Arrange the mushrooms on the prepared baking sheet.

Mixing the Filling

  • In a medium bowl, mix together the crab meat, cream cheese, Parmesan, mozzarella, mayonnaise, garlic, lemon juice, parsley, and Old Bay seasoning. Stir until well combined.
  • Season with salt and pepper to taste.
  • Spoon the crab mixture generously into each mushroom cap until they’re well-filled.
  • Sprinkle extra Parmesan cheese on top of the stuffed mushrooms.

Baking

  • Bake for 18-20 minutes, or until mushrooms are tender and the tops are golden brown.
  • Garnish with fresh parsley before serving.

Notes

For extra crunch, consider adding crushed breadcrumbs to the top before baking. You can also experiment with different fillings like spinach or artichokes.
