Ingredients

Meat Mixture

  • 2 large eggs
  • 2/3 cup milk can substitute with dairy-free alternative
  • 32 pieces Ritz crackers, crushed into fine crumbs
  • 1/2 cup onion, finely chopped yellow or white onion can be used
  • 4 ounces sharp cheddar cheese, shredded can substitute with other cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds ground beef can substitute with ground turkey or chicken

Glaze

  • 1/2 cup ketchup
  • 1/2 cup brown sugar can adjust sweetness to taste
  • 1 teaspoon mustard

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan or baking dish.
  • In a large mixing bowl, beat the eggs until well-combined. Gradually stir in the milk.
  • Incorporate the crushed Ritz crackers and allow them to soak up the liquid.
  • Add the finely chopped onion and shredded cheddar cheese, stirring to ensure even distribution.
  • Gently mix in the ground beef, being cautious not to overwork the mixture.

Baking

  • Shape the meat mixture into a loaf and place it into the greased baking dish. Bake for 45 minutes.
  • Prepare the glaze by whisking together ketchup, brown sugar, and mustard in a small bowl.
  • After 30 minutes of baking, spread half of the glaze over the top of the meatloaf and return to the oven.
  • Bake for an additional 10 minutes, then spread the remaining glaze and bake for another 5-10 minutes, until the internal temperature reaches 160°F (71°C).

Serving

  • Let the meatloaf rest for about 10 minutes before slicing to maintain juiciness.
  • Serve warm with mashed potatoes, green beans, or as leftovers in a sandwich.

Notes

Tips: Don't overmix to keep the meatloaf tender. Consider adding herbs or swapping cheese and proteins for variations. Line the pan with parchment for easy cleanup.
