Instructions

Make the Crust

  • Combine the crushed graham crackers, sugar, and melted butter in a mixing bowl. Mix until the crumbs are thoroughly coated.
  • Press this mixture firmly into the base and sides of a 23 cm pie dish to create an even layer.
  • Refrigerate for 30 minutes to firm up.

Whip the Filling

  • In a separate bowl, beat the softened cream cheese until smooth.
  • Gradually add the sweetened condensed milk, thawed lemonade concentrate, and lemon zest. Mix until creamy and fully combined.

Fold in Whipped Cream

  • Gently fold the whipped cream into the cream cheese mixture using a spatula, maintaining the light and fluffy texture.

Fill & Chill

  • Pour the creamy filling into the chilled crust and smooth the top.
  • Cover with plastic wrap and refrigerate for a minimum of 4 hours or overnight until it has set firmly.
