Ingredients

For the soup

  • 1/2 lb ground sausage Can substitute with ground turkey or chicken
  • 5 cups low-sodium chicken broth Homemade or store-bought
  • 4 cups baby spinach Fresh
  • 8 oz mushrooms, sliced Any variety
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 5 pieces lasagna noodles, broken into pieces Can replace with gluten-free noodles if desired

For the sauce

  • 3 tbsp butter
  • 3 tbsp flour Use gluten-free flour for a gluten-free version
  • 1 cup milk
  • 1 cup Parmesan cheese, grated Can substitute with ricotta for a different flavor

Spices

  • 1 tsp dried oregano
  • 1/2 tsp dried basil

Instructions

Cooking the Soup

  • In a large pot over medium heat, cook the sausage until browned and no longer pink. Break the sausage into crumbles as it cooks.
  • Add in the chopped onion and sliced mushrooms. Cook for 5–6 minutes until the onions are translucent and the mushrooms are tender.
  • Stir in the minced garlic and fresh spinach, cooking until the spinach wilts.
  • Carefully pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for about 5 minutes to let the flavors blend.
  • Toss in the broken lasagna noodles, dried oregano, and dried basil. Let everything simmer for 10–12 minutes, or until the noodles become tender.

Preparing the Sauce

  • In a separate pan, melt the butter over medium heat. Whisk in the flour and let it cook for 1 minute until lightly golden.
  • Slowly add the milk to the butter and flour mixture while whisking continuously until the mixture thickens (about 3–5 minutes).
  • Remove the thickened sauce from heat and stir in the grated Parmesan until fully melted and smooth.

Finishing the Soup

  • Gently stir the creamy Alfredo sauce into the simmering soup. Mix well, allowing the flavors to harmonize, and serve hot.

Notes

To elevate your soup, try adding a pinch of red pepper flakes for a subtle kick. For a thicker texture, consider adding more flour or cooking it longer. Fresh herbs can enhance the presentation.
