  • 2 teaspoons Dijon mustard
  • 1/2 cup Asiago cheese, grated

Instructions

Preparation

  • Preheat your oven to 450°F (230°C) and grease a baking dish.
  • Arrange the sliced onion rounds in a single layer in the greased baking dish. Drizzle with olive oil.
  • Season onions with fresh thyme, salt, and pepper.

Roasting

  • Roast the onions in the preheated oven for about 20 minutes until they begin to soften and caramelize.

Sauce Preparation

  • In a saucepan, heat the heavy cream over medium heat until it starts to simmer.
  • Stir in the Dijon mustard and half of the grated Asiago cheese until melted and smooth.

Assembly

  • Once onions are roasted, pour the creamy sauce over them and sprinkle the remaining cheese on top.
  • Cover the dish with foil and bake for another 20 minutes until the onions are tender and the dish is bubbly.

Notes

For added flavor, consider adding garlic to the cream sauce, red pepper flakes for spice, or herbs like parsley or chives before serving. You can substitute Asiago with Gruyère or Parmesan cheese, or use other herbs like rosemary or sage.
