Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly season both sides of the chicken with salt and pepper, then coat them in flour.

Cooking

  • In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Brown the chicken pieces in two batches, cooking for about 3–4 minutes on each side. Transfer them to a 9x13 baking dish.
  • In the same skillet, add 1 tablespoon of butter, then sauté the sliced cremini mushrooms until browned, about 5 minutes. Add this to the baking dish with the chicken.
  • Melt the remaining 2 tablespoons of butter in the skillet. Stir in the minced garlic and flour, cooking for about a minute to form a roux. Pour in the dry sherry and gradually whisk in the heavy cream, cooking until the sauce thickens slightly. Season with salt and pepper.
  • Pour the creamy sauce over the chicken and mushrooms in the baking dish, ensuring everything is well coated. Top with Muenster cheese.
  • Cover the dish with foil and bake for 20 minutes.
  • Uncover and broil for a few minutes until the cheese is bubbling and golden.
  • Allow the bake to rest for a few moments before serving.

Notes

You can assemble the dish ahead of time and refrigerate until ready to bake. Substitute Muenster cheese with mozzarella or provolone if needed. Add vegetables like spinach or broccoli for extra nutrition.
