Instructions

Preparation

  • In a large pot over medium heat, heat the olive oil until shimmering.
  • Add the Italian sausage into the pot and cook until browned, breaking it apart with a wooden spoon.
  • Toss in the chopped onion and minced garlic, and sauté for 3–4 minutes until the onion is translucent.
  • Pour in the chicken broth and diced tomatoes, stirring to combine. Bring to a gentle simmer.
  • Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Let simmer for about 10 minutes.
  • Fold in the baby spinach, cooking just until wilted, about 2 minutes.
  • Taste the soup and season with salt and pepper according to preference. Serve hot.

Notes

For added spice, consider adding crushed red pepper flakes. Substitute half-and-half for a lighter option. Adding a bay leaf during simmering can further enhance flavor.
