Ingredients

Crust Ingredients

  • 1 packet tennis biscuits or graham crackers, crushed
  • 1/2 cup melted butter

Filling Ingredients

  • 1 cup Cremora (coffee creamer powder)
  • 1/2 cup cold water
  • 1 cup plain or vanilla yogurt
  • 1 tin (397g) sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice
  • 1 zest of lemon (optional)

Instructions

Preparation

  • In a medium bowl, combine the crushed biscuits with the melted butter, mixing until all crumbs are evenly coated.
  • Press this mixture firmly into the bottom of a square or round glass dish. Chill in the refrigerator for about 10 minutes to set.

Making the Creamy Mixture

  • In a separate medium bowl, stir together the Cremora and cold water until smooth. Allow this mixture to sit for about 5 minutes so it can thicken slightly.
  • Once thickened, whisk in the yogurt and sweetened condensed milk until smooth and creamy. Gradually add the lemon juice and zest, mixing until fully incorporated.

Assembly

  • Pour the creamy and tangy filling over the chilled biscuit crust, spreading it evenly with a spatula.

Chill and Serve

  • Place your dish in the refrigerator and allow the tart to set for at least 4 hours, although leaving it overnight is preferable.
  • After chilling, slice into pieces and serve cold.

Notes

To elevate your tart, you can mix in crushed fruit or top with fresh fruits or a drizzle of honey. Chill the dessert long enough for it to set properly.
