Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease an 8-inch cast iron skillet or baking dish.
  • In a small bowl, combine melted butter, olive oil, balsamic vinegar, thyme, garlic powder, salt, and black pepper.
  • Arrange potato slices in a circular pattern, slightly overlapping each layer, brushing each layer with the butter mixture.

Baking

  • Cover the dish with foil and bake for 40 minutes to steam the potatoes.
  • Remove the foil, sprinkle Parmesan on top if using, and bake uncovered for another 20 minutes.
  • Let the torte cool for about 5 minutes before slicing.

Serving

  • Serve warm, garnished with extra thyme and a sprinkle of sea salt.

Notes

To elevate the dish, ensure uniform slices for even cooking. You can layer in thin slices of onion or roasted garlic. Prepare the torte a few hours in advance for convenience.
