Ingredients

Main Ingredients

  • 1 cup fresh spinach, finely chopped Freshly chopped spinach gives a vibrant flavor.
  • 1 cup shredded mozzarella cheese Feel free to add more mozzarella for a cheesier bite.
  • 1/2 cup shredded parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp Italian seasoning Can be substituted with herbs de Provence.
  • 1 large egg (optional) Acts as a binder but can be omitted for a lighter option.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a medium-sized mixing bowl, combine the chopped spinach, mozzarella cheese, parmesan cheese, garlic powder, salt, and Italian seasoning. If using, mix in a beaten egg to help bind the ingredients together.
  • Scoop small portions of the mixture onto the lined baking sheet and flatten each portion slightly with the back of the spoon to form small discs.

Cooking

  • Place the baking sheet in your preheated oven and bake for 10-12 minutes or until the edges turn crispy and golden brown.
  • Once baked, let them cool slightly before serving. Enjoy on their own or with your favorite dipping sauce.

Notes

For added flavor, consider pairing these bites with yogurt, tzatziki, marinara, or ranch dressing. You can store leftovers in an airtight container for up to three days or freeze for up to three months.
