Instructions

Preparation

  • In a mixing bowl, whisk together the chickpea flour, salt, cumin, garlic powder, paprika, and black pepper.
  • Gradually add water, whisking continuously until the batter achieves a smooth consistency.
  • Stir in the olive oil and lemon juice, then let the batter rest for 10-15 minutes.

Cooking

  • While the batter is resting, heat a non-stick pan over medium heat and lightly grease it with olive oil.
  • Just before cooking, stir the baking powder into the batter.
  • Pour a ladleful of the batter into the hot pan and cook for about 3-4 minutes, or until bubbles form on the surface.
  • Flip gently and cook for an additional 2-3 minutes until golden brown.
  • Repeat the process with the remaining batter.
  • Finish the flatbreads with fresh parsley, rosemary, and sesame seeds before serving.

Notes

For a fluffier flatbread, let the batter chill for up to 30 minutes before cooking. You can customize flavors with different spices or herbs.
