Ingredients

For the wraps

  • 2 large flour tortillas Soft, flexible, and the perfect base for rolling.
  • 1/2 cup crumbled feta cheese Salty and tangy, enhances every bite.
  • 1 small cucumber Thinly sliced, adding a refreshing crunch.
  • 1 tbsp lemon juice Adds a zesty brightness to the flavors.
  • 1/4 cup Greek yogurt Creamy and tangy, serves as the wrap's luscious spread.
  • 1 tbsp chopped fresh dill or mint For an aromatic and herbal touch.
  • 1 tsp olive oil Adds richness to the spread and helps toast the wraps.
  • to taste salt and pepper For seasoning.
  • 1 handful baby spinach or arugula Optional for an extra layer of greens and nutrition.

Instructions

Preparation

  • In a small bowl, combine the Greek yogurt, lemon juice, olive oil, chopped dill (or mint), salt, and pepper. Stir until the mixture is smooth and creamy.
  • Lay the tortillas flat on a clean surface. Spread the yogurt mixture generously over two-thirds of each tortilla.
  • On top of the yogurt spread, arrange the thin cucumber slices, sprinkle the crumbled feta cheese, and add baby spinach or arugula if using.
  • Starting from the bottom edge of the tortilla, gently fold it upwards. Then, fold in the sides and carefully roll the wrap tightly.

Cooking

  • Heat a skillet over medium heat with a drizzle of olive oil. Once hot, place the wraps in the skillet and toast for 2–3 minutes on each side, or until golden brown and crispy.

Serving

  • Let the wraps cool slightly after toasting. Cut them in half or quarters and serve immediately.

Notes

Consider using other herbs such as fresh basil or cilantro for a twist. For a more filling option, add grilled chicken or chickpeas, and enhance with a splash of fresh lemon juice just before serving.
