For the Fish

  • 4 pieces cod or haddock fillets (patted dry) Choose high-quality fish for best results.
  • vegetable oil Essential for frying.

Instructions

Preparation

  • Begin by heating vegetable oil in a deep pan or fryer to 350°F (175°C).
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and any optional spices.
  • Slowly pour the cold beer into the flour mixture while whisking continuously until smooth and slightly thick.
  • Set the batter aside and allow it to rest for about 10 minutes.
  • Lightly coat each fish fillet in plain flour to ensure the batter adheres properly.

Cooking

  • Dip the flour-coated fish fillets into the prepared batter, ensuring they are fully coated.
  • Carefully lower the battered fish into the hot oil, frying for 5–7 minutes. Turn them once to ensure they are golden brown and crispy on both sides.
  • Once done, drain the fish on a wire rack or paper towels to remove excess oil.

Serving

  • Serve the fish hot alongside tartar sauce and fresh lemon wedges.

Notes

Using really cold beer will create an even lighter batter. Experiment with spices and avoid overcrowding the pan for best results.
