Instructions

Preparation

  • Slice the feta block into thick sticks, aiming for about 6–8 pieces, and pat dry with paper towels.
  • Prepare a dredging station with flour in one bowl, beaten egg in another, and a mixture of panko breadcrumbs and crushed pistachios in a third bowl.
  • Coat each feta stick first in flour, then dip in the beaten egg, and finally roll in the pistachio-panko mixture, pressing gently to ensure a thick coating.
  • Chill the coated sticks in the fridge for 15–20 minutes to help the coating adhere.

Cooking

  • Preheat your air fryer to 200°C (400°F). Lightly spray the sticks with neutral oil.
  • Place the sticks in the air fryer basket, ensuring they do not touch each other. Cook for about 6–8 minutes, turning halfway through.
  • While the feta sticks are frying, gently warm honey in a small saucepan and stir in chili flakes and a pinch of salt.
  • Once the feta sticks are ready, drizzle the hot honey over the top and optionally sprinkle more crushed pistachios and herbs.

Notes

Ensure the feta is well-drained and patted dry before coating to enhance crispiness. Be generous with the pistachio breadcrumbs and chill the coated sticks before air-frying to prevent falling apart.
