Instructions

Preparation

  • Combine whipped feta, finely chopped pistachios, mint, lemon zest, and a dash of black pepper in a mixing bowl. Mix until creamy and cohesive.
  • Prepare a shallow dish filled with warm water. Soften each rice paper sheet by dipping it into the water for 5–10 seconds until pliable.
  • Lay each softened sheet on a clean surface. Spoon about 1.5 tablespoons of the creamy feta filling into the center.
  • Fold the sides of the rice paper over the filling, tucking it snugly, then roll tightly to seal.
  • Optionally decorate the top with an edible flower or a sprinkle of sesame seeds.

Cooking

  • Choose between air-frying at 200°C (392°F) for 6–8 minutes until golden, or pan-frying in olive oil on both sides until crispy.

Serving

  • Serve warm with lemon wedges, a drizzle of hot honey, or a yogurt-herb dip.

Notes

For a quicker preparation, make the whipped feta and filling beforehand. Use warm water to soften rice paper, and avoid over-soaking.
