Ingredients

For Assembly

  • 8-10 sheets rice paper Light and translucent, they crisp up beautifully in the air fryer.
  • Warm water for soaking Essential for softening the rice paper, making it pliable for wrapping.
  • Olive oil spray or neutral oil for brushing This helps achieve that gorgeous golden crispness.
  • Extra crushed pistachios (optional garnish) For additional crunch and visual appeal.
  • Mint leaves (optional garnish) Fresh and aromatic, they add a beautiful contrast.
  • Chili flakes or za’atar (optional garnish) A touch of heat or herbal notes to enhance the flavor.

Instructions

Make the Filling

  • Combine the feta cheese, cream cheese, Greek yogurt, lemon zest, freshly ground black pepper, and honey in a food processor. Blend until the mixture is luxuriously smooth and creamy, then gently fold in the finely chopped pistachios. Refrigerate for about 20 minutes.

Soften the Rice Paper

  • Prepare a shallow bowl with warm water. Dip each rice paper sheet into the water for 5-10 seconds until soft but not too delicate.

Assemble the Triangles

  • Lay the softened rice paper sheet on a clean surface, place a spoonful of filling at one edge, fold it over to create a triangle, then tuck in the edges and seal securely.

Repeat & Air Fry

  • Repeat the process with remaining sheets and filling. Brush with olive oil, place in air fryer at 200°C (390°F) for 6-8 minutes, flipping halfway through.

Serve & Garnish

  • Allow the samosas to cool slightly, serve hot garnished with crushed pistachios or mint leaves, and accompany with chili oil or yogurt.

Tips include ensuring rice paper is not over-soaked, maintaining a clean damp towel while working, and an air fryer is recommended for a healthier crisp finish.
