For the Fritters

Instructions

Prepare the Filling

  • Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
  • Add minced garlic and sauté for about a minute until fragrant.
  • Introduce the finely chopped spinach and allow it to wilt for 2-3 minutes.
  • Stir in crumbled feta, ricotta, dill, lemon zest, nutmeg, salt, and pepper. Let cool slightly.

Make the Dough

  • In a large mixing bowl, combine cornmeal, flour, baking powder, salt, black pepper, oregano, and smoked paprika.
  • Add egg, buttermilk, and melted butter, mixing until a thick dough forms.

Assemble the Fritters

  • Take about 2 tablespoons of dough and flatten it.
  • Spoon 1 tablespoon of filling into the center and cover it with more dough, sealing the edges.

Fry Until Golden & Crispy

  • Heat vegetable oil over medium flame in a skillet.
  • Fry each fritter for about 2-3 minutes on each side until golden brown.
  • Drain on paper towels.

Serve & Enjoy

  • Serve warm with Greek yogurt or tzatziki on the side.

Notes

For a healthier alternative, consider oven-baking the fritters instead of frying.
